THAI PORK SKEWERS WITH STICKY DIPPING SAUCE

Instructions

FOR THE PORK

Combine all the ingredients for the pork, apart from the pork itself, in a large dish. Add the pork and coat well. Cover and place in the fridge to marinate for at least 1 hour or overnight if you have time. Meanwhile, soak the bamboo skewers in water.

 

FOR THE DIPPING SAUCE

To make the dipping sauce, place all the ingredients into a small saucepan over a medium heat. Bring to a simmer and bubble for 5-7 minutes until it becomes slightly syrupy (it should coat the back of a metal spoon). Set aside to cool.

Thread the pork on to the skewers. Heat a griddle pan, frying pan or grill to high. You can also cook these on the barbecue. Cook the pork for 2-3 minutes on each side or until done, basting with the remaining coconut milk halfway through.

Serve the skewers immediately with the dipping sauce.

Preparation time: 20 minutes, plus 1 hour for marinating

Cooking time: 15 minutes
